I am not a baker, but this very simple recipe works magic in my house.

My mother passed this recipe on to me and over the years, in spite of the calories, I have realized that it has deep restorative powers on my children, my husband, my friends and even myself which is odd because I don't eat muffins. Never have. I was always a bagel and toast kind of girl. I don't bake them a lot, but when I do, the act of making them, oddly enough, relaxes me and the joy it brings my household makes me feel good about myself in a corny, retro, 50's kind of way.  Hard to explain, but...

it must be that chocolaty baked smell that wafts through my house. 

GRAMMY'S CHOCOLATE CHIP MUFFINS

Preheat oven to 350 degrees

Sift:
1 cup flour
1 tsp baking powder
1/4 tsp. salt

Cream:
1/2 stick unsalted butter softened
1/2 cup sugar
1 egg
1/2 cup milk
1/2 tsp. Double Strength Vanilla Extract (Penzey's)

Add flour to creamed mixture. Mix well but don't over do it. Then fold in:

2/3 cup semi sweet morsels

Line muffin pan with Paper Muffin Cups and spoon mixture into each cup. (Don't fill more than halfway...unless you like it spilling over the top...these suckers rise)

Bake 12-15 mins. Longer if you like the tops brown.
