Eau du Grandma
No tricks to this easy muffin treat.
Trust me...your kitchen will smell just as good as these muffins taste!
INGREDIENTS:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 cup canned solid-pack pumpkin (from a 15 ounce can)
1/3 cup vegetable oil
2 large eggs
1 teaspoon pumpkin-pie spice
2 teaspoon cinnamon - divided
pinch nutmeg
1 1/4 cups plus 1 tablespoon sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350 degrees. Line muffin pan with paper cups.
Whisk together pumpkin, oil, eggs, pumpkin pie spice, nutmeg, 1 teaspoon cinnamon and 1 1/4 cups sugar in large bowl. Sift together baking soda, salt and flour then whisk in until just combined.
Fill muffin cups about 3/4 full with this mixture. In a separate bowl, stir together 1 teaspoon cinnamon and remaining 1 tablespoon sugar. Sprinkle on top of each muffin. (You can make more of this if you want a sweeter top!)
Bake until golden brown, about 25-30 mins.
